Raspberry and rosewater gin rickey

Sometimes we like to let our creative side loose by making a refreshing cocktail at home … where do you go to get all your ingredients?

Ingredients:

2/3 cup gin of choice

1/3 cup lime juice

1/3 cup granulated sugar

1 tsp rosewater

2 cups fresh raspberries

Club soda

Ice

 

Method:

In a small bowl, combine the gin, lime juice, granulated sugar and rosewater. Mix until the sugar is mostly dissolved.

Add the raspberries to the bowl, smushing them against the side of the bowl to release the juices. Let the mixture sit for one hour, occasionally smushing the raspberries.

Before serving, strain the gin and raspberry mixture into a new bowl, pressing the raspberry bits and pieces against a sieve to release as much liquid as you can. Fill a glass with ice, then fill halfway with the gin and raspberry mixture. Top with club soda, garnish with figs and serve immediately. Enjoy!
