David Higgs. Need we say more? Not really … but we will anyway. The award-winning chef who’s well-known for creating culinary magic at Five Hundred at The Saxon has just opened Marble, his very own ‘live-fire’ restaurant in the über-trendy hub of Rosebank. It’s impossibly chic and immaculately designed, fully equipped with what we’d call the Cadillac of grilling machines. Our evening of epicurean delight began with aperitifs and soaking up the sunset in the plush bar lounge that spills out onto the balcony. Being four floors up, you can only imagine the palatial skyline views! The restaurant’s in-house sommelier then showed us to the magnificent floor-to-ceiling glass cellar that’s filled with spellbinding wines and champagnes. We opted for the Babylonstoren Chardonnay to elevate the flavours of our first course – hot smoked salmon trout topped with green pickles, endive salad and dill and caper yoghurt. David knows just how to combine simple ingredients to create the freshest, most tantalising dishes! Next up, the main course … Marble’s signature fillet served with roasted vegetables, sweet potatoes and sweet pepper jus, paired with Shannon Mount Bullet Merlot, which lifted the smoky components of the perfectly cooked dish to the sublime. Our gastronomic tour de force ended with a decadent dessert of burnt strawberries, pistachio crème, ash meringue and kataifi, which was most certainly the star of the show (what can we say … we’ve got a sweet tooth!). It’s safe to say that we’ve found our new favourite spot in Joburg for a seriously splash lunch or a romantic indulgence!
