Stuffed sweet potato for easy outdoor eating

We stumbled across this amazing recipe from local born and bred blogger Lexi Monzeglio on Whisking It and we just had to share. It’s something a little different if you’re planning an outdoor dine and wine get together with your friends and you want to impress them with something a bit more exciting than salad.

Ingredients

4 large sweet potatoes

1/2 pack Cheese Grillers

150gr broccoli

1 red onion

1 cup grated mozzarella cheese

 

Instructions

Preheat the oven to 200° C

Parboil the potatoes for 15 – 20 minutes.

Chop up the cheese grillers and the onion and fry together.

Slice the par-boiled sweet potatoes down the middle.

Fill the sweet potatoes with the fried cheese grillers, onion and broccoli.

Top with mozzarella cheese.

Wrap in foil and bake in the oven for 45 – 60 minutes, or until the sweet potato is soft.

Then slap it on a wooden cutting board and present it to your guests with a knowing smile. Now that’s a gourmet garden dish.
